Happy Homemaker Monday

Posted by admin on

Garden work has started.  We had a busy weekend too.  We added another roost to the existing chicken coop.  Plans for the new one involve using barn wood from the knocked down barn.   We replaced the bottom board in one kitchen cupboard and purged what was under it. Installed the new wall towel rack in the smaller bathroom, installed new solar lights outside, and repaired a part on the dishwasher, and Hubby mowed all weekend. We ended the evening by grilling burgers, and toasting the buns on the grill.  We mixed in chopped garden jalapenos, garlic and onion, and topped...

Fluffy coconut cupcakes topped with a tart and tangy key lime frosting!

Posted by admin on

We might only be halfway through April, but my mind is ALREADY in summer mode. Bring on the warm evening walks, beautiful sunsets, and most importantly, tropical flavors!  So this week, I decided to kick off summer just a little earlier with these Coconut Key Lime Cupcakes! With a moist and supremely soft base of coconut cake and a creamy crown of key lime frosting, these cupcakes pretty much SCREAM summer.  And seriously, how cute are they? There are a few basic steps to making orange marmalade using the whole fruit method: The citrus fruit are boiled in a large pot of water, whole, until they are very tender and soft. The soft boiled fruit are then sliced thinly, combined with sugar and lemon juice. The pits are discarded. The orange marmalade is boiled to 219–220 ºF (104–105 ºC). This is the ideal setting temperature for marmalade based...

This recipe was part of my mission to find more lunch recipes that aren’t sandwiches or leftovers, and oh my gosh guys it’s incredible

Posted by admin on

I made it 2 weeks in a row if that’s any indication! Of course this pasta salad recipe comes from Budget Bytes, and it’s honestly one of the easiest recipes I’ve ever made. Because I don’t have a grill (college life) I used the broiler on my stove, and this recipe was as easy as 1. cooking my veggies, 2. making my dressing, 3. making pasta, and 4. putting it all together. It honestly took me half an hour, and for a whole week of lunch meal prep? Incredible. It would also be a great side for dinner, especially for...
