Ingredients:
Chicken
- 1 pound of chicken breast
- ½ cup of all-purpose flour
- ½ cup of cornstarch
- 1 tsp of baking powder
- 2 eggs, beaten
- Salt and pepper, to taste
- Vegetable oil, for deep frying
Honey sriracha sauce
- ½ cup of honey
- 2 tbsp of sriracha
- 2 tbsp of light or all-purpose soy sauce
- 2 tbsp of white wine vinegar
- 1 tbsp of cornstarch
- ¼ tsp of garlic powder
- Salt and pepper, to taste
To serve
- Cooked rice
- Sesame seeds
- Green Onion, chopped
Directions:
Step 1
Dice the chicken into bite-sized pieces, then put them in a large mixing bowl, and season with salt and pepper to taste. Prepare two separate mixing bowls, one with beaten egg and seasoned with salt and pepper, then the other with a mixture of flour, cornflour or cornstarch, baking powder, and a pinch of salt and pepper. Dip and coat each piece of chicken into the egg, then dredge them into the flour mixture, press in the flour to create a flaky texture, and repeat to the rest of the chicken. Place a suitably-sized pot on a stove, then heat it up to about 180°C or 365°F, and add about 3 to 4 cups of oil. Once the oil is hot enough, fry 3 to 4 pieces of chicken for about 4 to 5 minutes or until both sides of the chicken are crispy and cooked through.
Step 2
Place the cooked chicken on a wire rack with paper towels underneath to drain off excess oil, then continue deep frying the rest of the chicken. Place a saucepan on a stove, then combine the honey, soy sauce, sriracha, vinegar, garlic powder, and seasoning to taste with the heat still off. Stir them all together until well combined, then bring the heat to a gentle simmer until the sauce is uniform and incorporated. In a small dish or cup, dissolve 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth, then add it to the sauce mixture, and whisk it in until incorporated. Let the sauce simmer for a few more minutes until the sauce thickens and there are no more visible lumps. Add the cooked chicken to the sauce mixture, then gently toss until completely covered. Serve this over rice, then garnish with sliced green onion and sesame seeds, and enjoy!
