I say that quesadillas are healthy fast food. What’s your vote?

You can make them in a flash, one or two in a skillet, or an entire big batch on a sheet pan in your oven. And, they can be easily customized to your family’s liking.

If your family will allow it, you can add veggies to the quesadillas, too.

My picky eaters always complain about veggies (they want boring meat and cheese inside) but I think veggies are a great way to boost quesadilla nutrition….and add a little variety, too. I especially like sautéed onions and bell peppers in my quesadillas – yum!

I also like to add black beans to my quesadillas (yes, in addition to the refried beans!) and if there’s some leftover cooked rice hanging around in my kitchen, I usually throw that into my quesadilla as well. Yep, the sky is the limit.
3 reasons to love this recipe – Here’s a solid, basic meat and cheese meal even the pickiest eaters will flip for. These beef quesadillas can be eaten just as a meat and cheese taco would be, or you can add ALL your favorite toppings. Taco quesadillas can be made in mere minutes…right in your oven! No standing at the stove making them one by one anymore!!! What ingredients do you need to make ground beef quesadillas? Ground beef Taco seasoning Refried beans Flour tortillas Shredded cheddar cheese Your favorite taco toppings, as desired (don’t for get the fresh cilantro!!) Which tools are helpful for making beef quesadillas like these?
I like to use a 12-inch cast iron skillet when I brown ground meat, such as ground beef, sausage, turkey, or even venison. A good cast iron skillet is worth it’s weight in gold because it cooks very evenly and provides superior browning. For additional info on cast iron cooking and care, read more here.

Heavy-duty bakeware, such as the rimmed baking sheets in this recipe, is also important for superior and quick browning. I like stainless steel or aluminum baking sheets with a 1-inch rim. These will last a long time if you never let them get close to the dishwasher – always hand wash your baking sheets!
How to Make Easy Ground Beef Quesadillas in Your Oven – A Great Sheet Pan Meal for the Fam Prepare the ground beef mixture in a skillet. Meanwhile, spread the refried beans over each tortilla, then sprinkle with shredded cheese. Place some of the prepared ground beef mixture over the cheese, but just on one-half of the tortilla; fold and place the quesadilla onto the greased baking sheet. Repeat with the remaining ingredients. Top the prepared baking sheet of quesadillas with a second baking sheet, then bake for 20 minutes in the oven, or until the quesadillas are golden brown on both sides and hot throughout. Garnish the quesadillas as desired and serve at once. Ole! Common Questions Asked About This Recipe Can other types of ground meat be substituted for ground beef in this recipe? Yep! My freezer is often loaded with ground venison since my sons enjoy hunting. I like to combine ground venison with either ground beef or ground pork for many of my favorite recipes that call for ground beef…..such as Fiesta Ground Beef and Noodle Skillet, Instant Pot Tex Mex Pasta with Ground Beef, or Beef Patty Melt Sliders with Secret Sauce. If your family enjoys ground chicken, ground turkey, or ground bison, feel free to use those meats in this recipe in place of the ground beef. They work great. Why does this recipe instruct to place a second baking sheet on top of the prepared quesadillas as they are baked? Doubling up on baking sheets for cooking the quesadillas ensures a very wonderful thing: they get browned on both the top and the bottom at the same time. This is good news because it means you don’t have to turn the quesadillas half way through the baking time! If you don’t have a second baking sheet on hand for this cooking method, bake the quesadillas as usual on just a single baking sheet, turning each one over half way through baking process so they get crisped and golden brown on both sides. What holds the quesadillas together so they don’t spill out all their inside ingredients? Great question! Both the refried beans and the cheese act as a sort of “glue” to hold everything together, making these quesadillas so much easier to create.
